Mini Minnehaha Cake

Named after the fictional Princess Minnehaha in Henry Wadsworth Longfellow's 1855 poem Song of Hiawatha, this cake became a popular special-occasion desert in the late 19th century. My five inch miniature version combines four layers of delicate white cake with a rich walnut-apple butter filling, creamy burnt sugar frosting and decorative pecans.
